Industrial design of a compact sausage tying machine for the artisanal meat industry in Southern Spain

Atinox17 is a sausage tying machine developed for the artisanal meat sector in Andalusia. The project covers the full process, from research to industrial design and functional prototyping.
Many small producers still rely on manual tying, as existing machines damage natural casings, require large spaces and involve high costs. This project addresses that gap.

challenge
The key challenge was to mechanise the tying process without losing the precision and care of manual work. The machine had to preserve delicate natural casings while reproducing the traditional knot.
At the same time, it required a compact footprint and a fully new mechanical system.
solution
The machine is designed around the replication of the craftsman’s hand movement. A patented mechanism translates this gesture into a system of gears and precision components, activated by a foot pedal.
The overall geometry follows the natural path of the casing, guiding it through a curved tying tunnel. This reduces stress on the material and prevents damage.
The pedal system frees the operator’s hands, improving control during the process. A hinged upper cover allows easy thread replacement, supported by its curved form.
Built in stainless steel, the machine ensures durability, hygiene and easy cleaning. An integrated drainage system supports maintenance.
result
The project resulted in a functional prototype and a short validation series tested in real production environments. The machine achieves a hand-quality knot while preserving natural casings.
It reduces workspace requirements and increases production speed without compromising product quality. It also improves operator ergonomics.
The project proves that craftsmanship can be translated into precise mechanical systems.
